First step ..
1.Rajkachori bnane k liye aap ko pehle din se prepration krni padti hai .
Sabse pehle kachori bnaa kr rakh dijye ,or uske liye aapko chaiye ..
Ingredients - 1.Maida .. 250grams
2.ghee 4tsp .. moyan k liye
3.salt .. as per taste
4.Water ( pani) 1glass or as needed
Kachori ki filling k liye -
1.moong dal namkeen .. 1 katori ( 1 bowl)
2.lal mirch powder- ( 1/2tsp
3.dhaniya powder - 1tsp
4.amchoor powder- 1/2 tsp
5.garam masala powder -1/4tsp
6.salt (namak)- 1/2tsp
7.kasoori methi -1/2tsp
8.oil- 2tsp
9. Hing .. 2 pinchs
Kachori ka aata lgaane k liye maida ko chaan le phir usme ghee ko gunguna krk hatho se bhubhura hone tk mila le ,namak dal kr acche se milaye,or pani daal kr ek naram sa aata lgaa le. Phir ise halke bhige malmal k kapde se dhak kr rakh de
Kachori ki filling .. moong dal namkeen ko mixer main pees le powder ki tarah, ab kadhai main oil garam kre,usme hing dale, moong dal namkeen ka powder dale, sare masale dal kr dheemi aanch main bhune or kasoori methi dal kr gas bnd kr de. Is peethi ko thanda hone de,Phir kachori k aate ko brabar bhag main baant le or, thode bade pede bnaaye, ek ek krk peethi bhare or normal puri k size ki kachori bna le.
Kadhai main tel garam kre,or ek ek krk dheemi aanch pr dono taraf se palat kr golden kachoriyan tal le, kachori ka phoolna jaroori hai,tbhi aap iske andar,sari chije dal payengi ..
Sari kachori ko talne k baad thanda hone k liye rakh de.. Acche se thanda hone pe kisi saaf ,sukhe container main usko airtight krk rakh de . .
Second step ... Urad dal ki pakodi
Ingredients .. 1.bowl dhuli urad dal 3-4 hours bhigo kr barik pisi hui . Peeste wqt 4 hari mirch or ek adrak ka tukda or sath main thodi hing dal le .
2.namak swaad anusar
3.lal mirch powder ( optional)
4.fry krne k liye oil
Pisi hui dal main masale mila kr choti choti pakoriyan bna kr fry kr le golden colour main.or ise namak mile pani main dal de.
Third step .. saboot moong ya moth jo bi ho aapke pass, ek bowl ki matra main bhigo de or uske sprouts taiyar kr le ..ye aap 2 din pehle se kr lijye .. Kachori k liye in sprouts ko thode se oil main hing or jeera ka tadka lga kr or thode namak or haldi k sath steam kr le.
Fourth step .. kabooli chana (chole) ko raat main bhigo de or use boil krk rakhe .. inhe jyada galaye ni
Fifth step .. Imli ki khatti meethi chutney bnaaye .. Imli ki chutney ki recipe ..
Imli puree .. 1 bowl iske liye imli ko bhigo kr chahn le ..
2.gud ( jaggery ) 5ograms
3. Sugar .. 1 bowl
4. Dried red chilles ..4 piece
5.salt 1/2tsp
6.black salt -1/2tsp
7.garam masala 1/4tsp
8.sonth pawder - 1/6tsp
9.oil -1tsp
10.jeera (cumin) 1/2 tsp
11.tejpatta (bay leaves) 2 piece
12. Thode kisimis k dane or 2 chuhara cut in length wise .
Sabse pehle pan main oil ko garam kre ,usme jeera dale ,tejpata dale or bhune,ab isme imli ka puree dale or chalaye,phir cheeni, gud or lal mirch dale or pakaye .. chuhara or kismis bi dale .
Thick ho jaye tb sare masale dale or 5min.k liye or pakaaye .. thanda hone pr store kre, imli ki chutney aap 1 month tk fridge main store kr sakti hai ye kharaab nahi hoti
Sixth step .. 4 bade aloo ko ubaal kr thanda kr le or chote cubes main kaat le
Seventh step .. taji jami dahi ko acche se math le .. dhyaan rakhiye ki dahi jyada patli na ho,agar aisa lge to dahi ko fentne se pehle uska pani nikal de .
Thodi hari mirch or hara dhaniya barik -barik kaat le.
Uble hue aloo or chana ko ek bowl main dale usme ,namak ,kala namak bhuna jeera,lal mirch powder or hari mirch or hara dhaniya dale or ek taraf rakhe
Ek bowl main thoda sa namak,thoda kala namak,thoda bhuna jeera or thodi bhuni kuti lal mirch dal kr mila le, ye Rajkachori k upar dalne wala masala ho gya ..
