Lock down special recipe no.4 Moong dal ki pakodi ki sabji

Good morning dosto ..
Lock down ka aaj 10th day hai, hopefully aap sabhi apne gharo main honge, kyoki safe rehne ka iske siwa doosra koi raasta nahi, khud safe rehna, or apni family ko safe rakhna. 

Ghar ke Male member, to yakinan bore ho rahe honge, aur females kaam ke bojh se hairaan, pareshaan, koi ni ye wqt bi gujar jayega, Hum sab ke imthinaan ka wqt hai.

Sb ko mil jul kr hansi khusi ye samay nikalna padega, Hum aurate hamesha se apni jimmedariyan bakhoobi nibhati aai hai, is time main bahut hi calm or cool rehne ki jaroorat hai, or family ko pura  support krne ki bhi.

Lock down main waise to vegetables, fruits or baki jaroori saman ki dikkat nahi, pr phir bi pehle ki tarah jb bi market ja kr kch bi le kr aa jaye aisa mahol bi nahi hai.

Aise main agar kabhi ghar main sabji na ho koi, to hum ladies ko badi uljhan hone lgti hai, kya banaya jaye, aise wqt main jb hum sb almost three time cook kr rahe ho. Breakfast, lunch and dinner. Hr meal main variety chaiye hoti hai. Pr roj roj kya banaye, ye bi ek problem hai.


Hum marwariyon mai khasskar Rajasthani marwariyon ke khane main kafi sari curries hai, jo baki cuisines main nahi, karan hai ye ki Rajasthan dry area hai, or ek time main wanha vegetables ki crop utni nahi hoti thi, to kafi sari local veggies ko wanha sukha kr rakhte the, or through out the year log un sab ki curries bnaaya krte the.

Jaise kair, sangri, tinde, gwaar ki fali, kachri, methi leaves, aur bhi kai sari chije hai jo Rajasthan main dry vegetables ke form main use ki jati hai.

Rajasthani gatte ki sabji kon ni jaanta, ye bahut hi tasty curry hai, jo Rajasthani thali ka ek jaroori hissa mani jati hai, aise hi Papad mangoudi ki sabji bi ek bahut famous curry hai. Ye curries fresh vegetables na hone pr hm aasani se bna sakte hai. Or apne khane ko ek naya swaad ek variety de sakte hain.

Ek or curry hai jo meri maa bnaaya krti thi, wo recipe aaj main le aai hoon aap sab ke liye, koi time aapke pass koi vegetable na ho to aap ise bna sakti hai apni family ke liye, chahe to lunch main ya phir dinner main, Roti ke sath bi utni hi acchi lgegi jitni rice ke sath, to ye curry hai " Moong dal ki pakodi ki sabji".  

Aloo or Tamatar hmaare gharo main, all time available hote hi hai. Aur kch khass chije nahi chaiye hme is curry ke liye, regular masalo ke sath ye ek simple pr bahut hi swaadist sabji hai.

Moong dal pakodi ki sabji ke liye hme jo ingredients chaiye honge wo is tarah se hai.

Ingredients ... for making Moong  dal ki pakodi.

1. Yellow moong dal - 1 bowl 

2.Ginger - ( adrak) 1 small piece.

3. Green chilies  -( hari mirch)  2 or 3

4. Hing (astofedia) 2 pinch

5. Salt as per taste - namak swaadanusar 

6. Whole coriander seeds ( sabut dhaniya)  - 1/4 tsp

7. Musturd oil ( sarso ka tel) for frying.

Moong dal ko 3- 4 hours ke liye soak kr lijye, phir use ginger, chili, or hing ke sath grind kr lijye. Grind krte wqt dal ko soak krk rakha hua pani pura nikal dijye, nahi to batter runny ho jayega. Ab isme salt or sabut dhaniya dal lijye.

Musturd oil ko garam kijye, or batter se choti choti pakodiyan bna lijye.

Ingredients -  for cuŕry 

1. Potatoes ( Aloo)  2 big, boiled, peeled and cut in small cubes, 

2. Tomatoes ( tamatar) - 2 big 

3. Chili ginger paste ( adrak, mirch ka paste) 1 tsp

4. Coriander powder ( dhaniya powder) 1tsp

5. Turmeric powder ( haldi powder) 1/4 tsp

6. Red chilli powder ( lal mirch powder) 1/ 2
Tsp

7. Cumin seeds ( jeera) 1/2 tsp

8. Musturd oil ( sarso tel) 1 big spoon 

9. Dry fenugreek leaves ( Kasuri methi) 1/2 tsp

10. Salt as per taste ( namak swaadanusar)

11. Garam masala - 1/4 tsp.


Ek pan main mustard oil ko heat kijye, oil acche se garam ho jaye, tb usme jeera daliye,  jeera brown ho jaye, phir chopped tomatoes daliye, tomatoes ko 3- 4 min.tk soft hone tk cook kijye, ab dhaniya powder,  haldi powder,  chilli powder,  daliye, rhoda sa pani daliye, aur 2 min. Or cook kijye, 
Ab diced potatoes,  daliye aur, 2 min.cook kijye, ab is stage pr pani dal dijye approax one and a half glass, curry  ko slow flame pr boil hone dijye, ek baar boil hone lge, phir moong dal ki pakodiyan dal dijye, or salt bhi dal dijye, slow flame pr five min. tk or cook kijye, After five minutes gas ko off kr dijye, garam masala daliye or kasuri methi ko crush krk curry main dal dijye. Garam garam moong dal pakodi ki curry rice ya chapati ke sath apni family ko serve kijye.

Ek chij main batana chahoongi yanha, Maine apni recipe main curry ke liye  aur frying dono ke liye mustard oil use kiya hai, pr ye compulsary nahi hai, Aap apni chioce ka koi bi cooking oil use kr sakte hain.

Tip .. waise ye recipe without onion - garlic hai, kuoki personally mera manna hai, onion- garlic wali curries main curry ka flavour onion- garlic ka hi aata hai,  vegetables ka actual flavour usme kanhi kho jata hai, pr phir bi bahut sare log hai jinhe without onion- garlic curries pasand hi nahi aati, to aise log, masala bhunte wqt usme onion - garlic paste bi use kr sakte hai. Uske liye oil heat kr ke pehle aap onion garlic paste bhune phir tomatoes  add kre.
